Do you find yourself wondering how there is time to eat healthy? Between getting kids to soccer, getting all of the jobs done around the house etc., healthy eating seems to be something you only read about. Turns out the secret to healthy eating is preparation and knowledge(I’m not going into the will power portion). There are a lot of forums and cook books out there where you can find healthy eating options, my favourites are OhSheGlows and ThugKitchen( who knew vegan could be so fun!). If you want someone to help, there are plenty of nutritionist that can also offer great tips and meal plans tapered just for you.
Back to the preparation bit, if you prepare you can make it easy. Summer is one of my favourite food seasons, there is so much to choose from! Fresh and delicious food waiting for you at local produce stores or farmers market. Farm to table freshness, the first step. The second is being prepared. One of my favourite lunches is the salad. I like to have a bag of greens washed and ready to eat.
Next, I have rice, quinoa, barley or the combination of all three made up. I usually start the week with my favourite salad dressing made up and presto… your salad base is ready.
You can add leftovers, feta, tomatoes pretty much anything that you like to the top and voila! You have a salad that is always easy and ready to make.
(This recipe is so good people literally drink if off their plates when the salad is done)Salad dressing
1/4 C olive oil
1/4 C apple cider vinegar
1/4 C maple syrup
3 Tbs soy sauce
1 Tbs dijon mustard
1/2 Tsp cinnamon
1/2 Tsp ginger
1 clove garlic
Combine all of the ingredients and whisk thoroughly. Refrigerate in your favourite dressing container. Shake before using.
Keeps for weeks, I often double or triple batches.
